Standards of Pure Class
Wagyu quality is assessed according to the strict Japanese grading system. Aspects such as marbling, color, texture of the meat and the color of the fat are taken into consideration. The Beef Marbling Score (BMS) specifically indicates the degree of marbling. Wagyu District strives for Wagyu with a high BMS score, which stands for excellent quality.
